Whenever customers ask us to recommend something a bit different, sea bass always comes to mind.
Sea bass has large flakes of meat, a tasty skin that crisps in the pan and a butteriness that makes it a luxurious table fish. And for a white fish, sea bass is high in omega-3 fatty acids, perfect for people trying to eat more of these healthy oils.
Sea bass is a fish that we eat more at restaurants than at home. Restaurant chefs love sea bass because it is luxurious, sure to impress diners but also quick and easy to cook—what better reason to cook sea bass at home too?
To pan fry sea bass, fry skin side down for four minutes and then flesh side down for a minute to ensure a crispy skin and perfectly cooked large flakes of white meat. Oven baking sea bass is also speedy, taking fifteen minutes from start to finish. This recipe from our archive is a good guide to oven baking sea bass and also has a recipe for a zingy orange and ginger sauce. And we have a fantastic recipe for baked sea bass with fennel and oregano (pictured above) that has just four ingredients.
A new favourite recipe at Regal is sea bass with sizzled ginger, chilli & spring onions from the BBC Good Food website. From the same site, we would also recommend this recipe for Italian baked whole sea bass.

We can offer you whole sea bass, descaled, prepared and cleaned for you. We sell these separately and they’re a good size, weighing a minimum off 400g each before being gutted and descaled.
Sea bass fillets are available in handy portion packs, two fillets per pack. We supply them chilled, descaled, skin-on and vacuum packed to protect the flesh, ready for the fridge, freezer or cooking that evening.
You can also purchase fresh sea bass fillets by weight. And it’s always worth checking if there are discounts available for buying multiple kilos of fish or savings for buying a combination of your favourite fish. (How to freeze fresh fish).
There is also the option of purchasing frozen sea bass, skin on, descaled and pin boned. We individually freeze them for you, meaning you can take out as many fillets at a time as you need. And they have a protective ice glaze to keep them in great condition in the freezer. Each pack has a label with a ‘best before’ date as a guideline.
