Most of the fish we provide is in whole fillets, prepared the morning we deliver, ready for you to portion, bag, freeze or eat that evening. Our market fresh fish can be stored for between 2 and 5 days in the refrigerator below 5°C, depending on the species, and we label your tray with that information as a guideline.
We provide a ‘best by’ date, and would recommend eating or freezing the fish before that date is reached, whilst your order has that pleasant sea smell. However, some supermarkets and fishmongers give a ‘use by’ date–when fish is approaching its ‘use by’ date, it is still fresh but may acquire a slightly fishy smell. People who don’t eat much fish might find this smell a little off-putting. But it is perfectly normal and there are a few things you can do to eliminate it.
If you plan to keep fish refrigerated up to its ‘use by’ date, if you have friends over for dinner in a few days and freezing and thawing the fish is impractical, for example, we have a few tips to get rid of that mild fishy smell.
Firstly, it’s important to remember that a mild fish smell is a surface smell only, a natural chemical reaction on the surface of the fish as it is exposed to oxygen in the air. So a very mild smell can be simply washed away with cold running water. Pat the fish dry afterwards and you’re ready to start cooking.
Tip: squeezing over a little lemon juice before rinsing in fresh water would produce a better result as the acid in lemon will break down the smell quicker. Don’t leave the fish covered in lemon juice for more than a few minutes as it will start to cook the fish. Strange, but true.
If you have the time, you could submerge the fillets in milk and leave in the refrigerator for an hour or so before rinsing with water and then patting dry. In other news, this method also works with fresh liver if left in milk for a few hours.
