Our locally sourced Yorkshire crabs and lobsters are wild caught from the Holderness Coast – a small stretch of coastline in East Yorkshire between the iconic nature reserve of Spurn Point and historic harbour of Bridlington.
The shallow, warmer inshore waters encourage Holderness crabs to feed on the mineral rich silt and mud, which produces a much tastier meat.
They are produced thoughtfully and are fully traceable from pot to plate, with the boat labelled on the packaging. And our crabs and lobsters are caught the old fashioned way using pots – a low impact and sustainable method.
The modest day boats we use have the highest standards. For example, they will not land a crab smaller than 140mm, compared to the standard 120mm. Crabs with roe are released to encourage reproduction and sustainability. And they release crabs with missing claws to allow them to regrow. (Incidentally, crabs have amazing healing qualities that allow them to regrow legs and claws. The University of Boston has taken some of the shells for testing with an aim to create bandages for the armed forces with the same healing properties.)
When caught, the crabs and lobsters are handled with care and caution to avoid any stress. Larger, offshore boats cannot go above and beyond in this way. Crabs are then checked by hand to make sure they are live before being processed. This is good ethical practice and it also avoids bad or dead crabs spoiling the taste of the entire batch. A smaller operation makes this possible and, unfortunately, mass producers tend to avoid this step and many crabs get crushed on larger boats.
Our supplier rewards fishermen who champion sustainability. The fishermen that provide our Holderness crabs and lobsters help to clean up the coast as they go with specialist picking equipment. It’s not their mess but it is their environment and they care, like us, about the future of that stunning stretch of coastline. No one wants shell in their dressed crabs and dressed lobsters. After boiling, the meat is then handpicked and checked. The crabs and lobsters are presented beautifully and then blast frozen to lock in the quality and freshness.
The crabs we provide are dressed with the white claw meat resting on top. There is also the option of purchasing ‘crack and snack’ Holderness crab claws. The boiled lobsters are available whole or dressed.
We don’t often get a chance to eat UK lobsters in the UK. It’s a shame that 90% of our lobsters are currently exported to Europe where it is perceived they’ll pay more for quality and the UK market is offered, in return, inferior Canadian lobsters. A great deal of crabs caught in the UK are flown to China where they are sold as a delicacy for up to five times the price that you would pay in the UK.
