We’re always on the lookout for a good fish recipe. And as an homage to Jamie Oliver and his Food Revolution 2016, we’ve compiled our favourite recipes from Jamie that we’ve tried and loved. Enjoy.
Salmon with pesto dressed veg This a fantastically tasty and simple salmon recipe with some excellent suggestions for the leftover green pesto!
Roasted salmon & summer veg traybake This simple recipe for an oven bake is summery and healthy. Salmon is Britain’s favourite fish but it can easily be replaced in this recipe with chunky fish such as cod loin, monkfish, haddock loin. Or you could roll fillets to slow cooking and put a large tooth pick through to hold them together as they roast on top of the vegetables. It’s very versatile and great way to use up vegetables from the fridge.
Whitebait & dill mayo Whitebait fried whole and served with mayonnaise is a classic. Jamie’s recipe with fennel seed flour to coat the little fish and dill in the mayonnaise is an excellent twist. Whitebait is full of Omega 3 and inexpensive. Perfect for a summer starter or light lunch.
Smoked salmon toasts This is an excellent recipe if you need to feed a lot of people this summer. The avocado, lemon, crème fraîche and in-season radishes give these toasts plenty of crunch, tang and taste to keep everyone happy. Weather permitting, this could be prepared and enjoyed al fresco.
Monkfish with spinach and feta With just 6 ingredients, this is minimum fuss for maximum flavour. Monkfish is one of the most expensive fish on the market. And a fish that people want to try but they’re worried they’ll cook it wrong and go to waste. This is a great recipe to start with as it allows the monkfish to be the star of the show.
